Chicken and Cheese Enchiladas

Mega Easy.  Mega Quick.  Mega Appreciated Dinner.
We used this recipe, except as always, we didn't really measure.  And we used HOT salsa, instead of the Picante Sauce.  And we didn't warm the tortillas before filling them.
My head chef this evening was the 6 year old.

Shame I didn't get a lovely picture of the actual enchilada, but I got the proud chef anyway.  The 2 year old was the only one who was unimpressed.  It was too spicy for him!  Even the anti-cheese campaigner sister heaped praise on her brother, the chef.  She said it was so good that we should think about going to make this for the Queen!
